Chef Pasquale has over 40 years of culinary experience and a large majority of that has been focused in Italian Cuisine.
Speaking with Chef Pasquale we saw him animate passionately as soon as we started discussing anything culinary. Food is his passion and brings him energy and purpose. Chef Pasquale was quoted saying that cooking for him is story telling and his canvas; is the culinary arts. After learning about Chef Pasquale’s previous experience we learned a lot about his creativity and drive throughout the decades often focusing on new techniques and executions before they trended on a larger scale.
Chef Pasquale believes in “always cooking from the heart”, and warns that just following the motions as a chef will leave the guests aware of a loss even if it is barely detectable. When asked about what defined his style as a chef, he told us to “keep it fun, and ahead of the curve.”
After enjoying some expertly crafted dishes from Chef Pasquale we asked how he comes up with such brilliant and beautiful dishes …he told us “For him it starts with the eyes, nose and then taste.” After seeing and tasting the capabilities of this true master, we quickly learned how lucky we are to have Chef Pasquale on our team. With Chef Pasquale anything is possible and get ready to be surprised on his attention to detail and limitless culinary imagination.
Outside of amazingly creative, aesthetically pleasing and perfectly balanced flavor spectrums of perfectly plated appetizers, entrees and desserts we learned about Chef’s earlier work with the healthcare sector.
Chef Pasquale was an industry pioneer and worked with Gastro-Intestinal specialists and doctors with The Children’s Hospital of Pennsylvania, Jefferson and Virtua to start early Gluten-Free recipes back in the early 2000’s. His culinary brilliance coupled with the research of Dr. Verna and other specialists helped lead and pioneer early Celiac ‘s/Gluten-intolerance issues to create recipes for children and adult sufferers whom had severe trouble finding dietary alternatives before much was known about these gluten-intolerant diseases.
On top of that, his culinary precision and knowledge even helped adolescent patients within the Autism Foundation. He helped provide gluten-free meals that helped doctors directly observe an increase in brain function and medication retraction for children suffering from autism, being affected by their diets.
Chef Pasquale is a true artist and pushes the limits when it comes to creativity, contrast and expertly crafting spectrums of sight, texture and flavor in his signature dishes.
